Bone broth soup
- 3 Large carrots, washed and rough chopped
- 2 tablespoons olive oil
- 2 tablespoon chopped garlic
- 28 oz Bone Broth, (or chicken or vegetable stock.)
- Salt and pepper to taste
- 1 Tablespoon balsamic vinegar
Cook Time: 50 min
Chop up carrots into large chunks
In a pot heat olive oil, add garlic and season with salt.
Then add carrots and let cook for about 1-2 minutes
Add bone broth, (swap out for vegetable stock to make vegan/vegetarian friendly.)
Stir and cook all together for about 7 minutes or until carrots soften.
Scoop carrots out and put into a mixer, then pour liquids. (I usually let everything cool for about 15-20 minutes before blending.)
Blend until smooth
Enjoy now or store for later. Great way to meal prep!
