Red cabbage slaw

 

Ingredients 

  • 1/2 Red Cabbage
  • 2 large carrots
  • Apple Cider vinegar
  • Olive Oil
  • Salt and Pepper to taste

Directions

Shred 1/2 red cabbage and put into a serving bowl.

Wash 2 large carrots, with a peeler, peel long strips and add to the shredded cabbage

Add olive oil, apple cider vinegar, salt, and pepper to taste. Mix together well, massaging your the cabbage and carrot mixture with clean hands.

Enjoy now or the next day. This salad keeps really well overnight.
