Deconstructed Vegetable Pie
Ingredients
- 1 Eggplant
- 2 Tomatoes
- 1 Summer Squash
- Olive Oil Spray
- 2 Tablespoons Olive Oil (to brunch on)
- Salt + Pepper to taste

Directions
Preheat oven to 400 degrees
Spray a baking dish with olive oil, (can use avocado or coconut oil as well)
Slice eggplant, tomatoes, and summer squash on a mandolin for thin and similar size slices
Generously brush with olive oil and season with salt and peopper
Bake for about 15 - 20 minutes, (I usually leave mine in longer so the top gets crispy)
Serve hot with your favorite protein!
