Roasted artichokes

 

Ingredients 

  • 4 Artichokes 
  • 3 tablespoon Olive Oil
  • 1 Lemon
  • Salt + Pepper to taste

Cook Time: 50 min
Servings: 4

Directions

Pre heat oven to 400 degrees

Clean the ends of the artichokes and cut in half, between each artichoke cleaning, rub just but choke with lemon to prevent from discoloring

Set on a baking sheet and rub with olive oil and salt

Bake for 30 - 40 minutes, for smaller sized artichokes, roast for 25 - 30 minutes

Place on a serving dish and sprinkle with heavy sea salt (optional)

I eat mine plain but vegan mayonaise is a great option.
